Ingredients

Pork loin with bone 2 Kg
Champignon 300 g
Olive oil 4 tbsp. l.
Dry rose wine 100 ml
Bulb onions 200
Butter 30 g
Milk 250 ml
Flour 25 g
Cheese 25 g
Salt, black pepper taste
Nutmeg (ground) on the tip of a knife
Egg yolk 1 PC

Cooking method

  • It is not at all difficult to prepare, delicious and very elegant dish that looks beautiful on the festive table. Veal can be used instead of pork. I slightly simplified the recipe and reduced the number of ingredients in the sauce, because I used pork, and I wanted the meat to come out drier and not float, I mean that it is more fatty and juicy in itself.

  • For cooking, we need such a whole piece of loin on the bone.

  • Grate the meat with salt and pepper. Cover the baking sheet with baking paper and brush with 2 tbsp. l. olive oil. Place in an oven preheated to 230 "C and bake for 10 minutes.

  • Remove meat from oven and extinguish with wine. Place in the oven for a couple of minutes to evaporate the alcohol smell.

  • Reduce oven temperature to 180 "C and cover the meat tightly with foil. Bake for 75 - 90 minutes. Take into account the individual characteristics of your oven! Remove the foil and bake for another 25-30 minutes until golden brown.

  • While the meat is baking, cook mornay sauce:
  • Grate the onion and simmer in 2 tbsp. l. olive oil (in the recipe for butter), add the mushrooms (I have canned champignons) and let the liquid evaporate well.

  • In a separate saucepan, heat the butter and fry the flour in it.

  • Pour in milk, add ground nutmeg, and stir well the sauce.

  • It should be smooth and lump-free.

  • Let the sauce cool slightly. Add yolk and stir. Add cheese and stir. Season with salt and pepper.

  • Combine the mushrooms with the sauce and mix well. Put out everything together for 3-4 minutes.

  • Divide the meat into portions without cutting through it to the very end (I overdid it a bit!)

  • Place the thickened mushroom sauce into the cuts. Bake the stuffed meat in an oven preheated to 180 "C for 10-15 minutes.
