  • We mix olive oil, butter (I just have a double portion of olive), 1 tsp. rosemary leaves (not chopped) and garlic, chopped in half.

  • We put in the microwave for 30 seconds at maximum power, then stir and heat for another 30 seconds. Remove from microwave, add lemon zest and set aside.

  • Remove from the oven and grease on top with a mixture of olive and butter (approximately using 1/2 of the prepared mixture), while trying to separate the slices a little so that the oil gets between them. Put in the oven again for another 15 minutes.
  • Take it out again and grease it again with the prepared mixture, separating the slices even more when greasing, and again put it in the oven for 15 minutes.

  • By this time, you should have used most of the oil mixture and almost nothing should be left in the cup with rosemary leaves and halved garlic cloves. Add one tablespoon of butter to them and heat up again in the microwave on high power for 30 seconds.
  • After the third 15-minute stay in the oven, take out the potatoes, grease with ghee and sprinkle with sea salt. Bake for another 10-20 minutes, or until crispy and golden brown on the outside and inside of the slices (naturally, the potatoes should be soft and baked).
  • Total baking times are approximate and will depend on the size and density of the potatoes. The total baking time is 55-65 minutes.
  • Remove from oven, sprinkle with 1 teaspoon of finely chopped rosemary leaves, garnish and serve.
