Bean soup with guacomole

Ingredients

for soup:
beans 300 gr.
onion 2 pcs.
garlic 2 cloves
tomato 1 PC.
tomato paste 1 tbsp. l.
cumin (not added) 1 tbsp. l.
ground cayenne pepper 1/4 tsp
paprika 1 tbsp. l.
oregano 1/2 tsp
water (broth can) 7 m. St.
salt taste
pepper taste
guacamole salsa:
avocado 1 PC.
onions (I have green onions) 1 small
green chili (replaced with bulgarian) 1 PC.
cilantro (I have parsley) bunch
lime juice 2 tbsp. l.

Cooking method

  • Unfortunately, that day my husband secretly took the camera to work and I could not take a photo. Therefore, the process will not be clear.
  • 1. Soak beans overnight.
  • 2. Then we rinse it, pour water into the multicooker at a risk of 6 m. Art., Put the beans there and set the "Stew" program, the beans-water ratio is about 1k3.
  • 3. While our beans are being cooked, cut the onion, garlic
  • 4. Take a small saucepan / skillet and fry for a few minutes until the onions are tender.
  • 5. Add garlic and pepper and fry for another minute or two.
  • 6. Add all the spices, mix well, the onion will immediately crisp (this is due to the paprika).
  • 7. Cut the tomatoes into cubes.
  • 8. Add cooked beans (from a multicooker saucepan), tomato paste, chopped tomatoes to the onion. We mix well. Simmer for a couple of minutes.
  • 9. Purée the beans and onions with a blender.
  • 10. Transfer the puree to the multicooker pan.
  • 9. Add water / broth to the beans. I added by eye, about 1-1.2 liters.
  • 10. Salt and pepper.
  • 11. We put on the program "Extinguishing" for 20 minutes.
  • Cooking guacomole topping:
  • 1. Finely chop onion, pepper, avocado, cilantro (parsley)
  • 2. Put in a bowl Bean soup with guacomole
  • 3. Sprinkle with lime juice.
  • Serve with chips, but since we ate this with the child, I replaced the chips with crackers!
