Cooking method

  • My beans were very old and it would take a very long time to cook them, even in a pressure cooker.
  • And I wanted stewed beans, like from a slow cooker.
  • And I turned on the Vegetables mode for 30 minutes, pressure 0.7.
  • After the end, the pressure did not release, but switched to the Moderation 88 g for 6 hours.
  • Salt at the end. Serve with fresh herbs.
  • And here is the result

Semi-sugar beans (for example, Shchedraya) have coarse fibers in their valves, and young shoulder beans are used for food.

The beans are harvested as the shoulder blades grow and develop - from the end of June to August. Under normal conditions, beans can be stored for no more than a day (since the shoulder blades quickly overripe, coarse and dry out); at low temperatures (about 0 ° C) and high relative humidity (about 90%) - up to 5-7 days. Vegetable beans are used in cooking and canning. It is prepared from it as an independent dish (boiled with butter or fried with butter and eggs), and is also used to make soups, vinaigrettes, side dishes, etc.Beans fried in vegetable oil and seasoned with tomato sauce are tasty even when cold.

Beans should not be eaten raw, as bean pods contain toxic substances that can cause poisoning, which, however, are destroyed by heat cooking.

Grain beans, in contrast to vegetables, are consumed in a mature state. Spherical or kidney-shaped beans from 0.5 cm to 1.5 cm long have various colors (white, green, brown, yellow, motley); white beans are of higher quality than colored beans. Beans contain 17-32% protein, up to 57% carbohydrates, up to 4% fat, mineral salts. Peeling varieties are grown for grain (for example, Gribovskaya), in which the beans are tough, non-fleshy, with a large number of fibers, a parchment layer is well developed in their thickness, and when ripe, the beans crack. Grain beans are used to make soups, meatballs, cutlets, casseroles, vinaigrettes, side dishes for boiled and fried meat, fish. It is advisable to use white beans for the first courses, as the colored beans give the soup a dark shade. Mixed beans are less convenient for cooking (different types of beans require different cooking times). Before preparing dishes from grain beans, it is sorted out, weeds are removed, washed two or three times in cold water.

To shorten the cooking time of beans, it is recommended to pre-soak it in cold water and leave it for 3-5 hours (you can soak it overnight). When soaking beans, water is taken 2 times more than grains (by weight). The temperature of the water during soaking should be no higher than 15 ° C, otherwise the beans may sour. Even with the slightest acidification, imperceptible to the taste, beans are poorly boiled. When boiled without soaking, a significant part of the beans loses their shape - they are boiled. Before cooking, the water is drained and the beans are poured with fresh cold water so that the beans are covered. When the water boils, it is drained, and the beans are poured with boiling water and boiled in a saucepan, covered with a lid, with a weak, continuous boil. It is recommended to salt the beans at the end of cooking. Duration of cooking is 1-2 hours. With acidic foods, beans, like all legumes, do not boil for a long time. Therefore, add tomato puree, as well as season the beans with vinegar, sauce can only be done when the grains become soft.

You cannot add soda when boiling beans, it speeds up the cooking process, but it contributes to the destruction of vitamin B1 contained in the beans and impairs their taste. It is not recommended to interrupt the boil during cooking and add cold water.This causes the beans to crack and boil more slowly.

To enhance the flavor of cooked beans, they are sometimes boiled with carrots, parsley, celery, and finely diced onions. For the same purpose, parsley and celery are used, they are tied in a bunch and boiled together with beans; after the end of cooking, remove. Cooked beans are consumed whole grains or mashed from them. Whole grains are seasoned with fat (vegetable oil, lard, lamb, beef or table margarine, cream), milk or tomato sauce with or without onions.
