Saffron Buns for Saint Lucia's Day

Ingredients

Chatterbox:
Milk 200 g
Sugar 100 g
Dry yeast 5 g
Wheat flour 100 g
Dough:
Saffron 1h l.
Sugar 2h l.
Butter 80 g
Salt 1 \ 3h. l.
Powdered milk 20 g
Wheat flour 325 g
Raisins 80 g
Milk for lubrication

Cooking method

  • For a chatterbox, heat milk with sugar to 37C, add flour, yeast, beat until smooth, cover and leave for 20 minutes.
  • Grind sugar with saffron in a mortar.
  • Melt the butter, cool.
  • For dough, mix all ingredients. Next, knead the soft dough for 7 minutes using a food processor. I used Thermomix, Spikelet mode.
  • Rinse raisins, dry, set aside 28pcs.
  • Knead the raisins into the dough with your hands.
  • Fold the dough into an envelope, cover and leave in a warm place for 40 minutes.
  • Next, divide into 14 equal parts, knead a rectangle with each hand, roll it up. pinch, cover and leave for 10 minutes.
  • Next, roll out the sausages, 40-50 cm long.
  • Roll from different sides in different directions, you get the letter S. Cover and leave for 1.5 hours.
  • Brush with milk before baking.
  • Bake in an oven preheated to 220C for about 20 minutes. The exact time depends on your oven.

The devils got angry, attacked the girl and cut off her head. But even after her death, her ghost stood on the rock with a lantern.

This day is a celebration of light. At dawn, thousands of young girls in white dresses and a crown of electric candles in wreaths, holding a lighted candle in their hand, carry the light into the dark Swedish winter. On this day, the Swedes choose the most dignified and bright girl, who is called Lucia.
