Rye bread with caraway seeds sourdough in a bread maker

Ingredients

Water 260 ml.
Leaven 1 tbsp. l.
Kvass wort concentrate 3 tbsp. l.
Sugar 1.5 tbsp. l.
Vegetable oil 1 tbsp. l.
Salt 1 tsp
Flour improver 3 tsp
Rye flour 1.5 cups
Wheat flour 1.5 cups
Caraway 1 tsp
Yeast 2 tsp

Cooking method

  • The sourdough was made from the instructions for the LG HB206-SE
  • Water-500ml.
  • Rye flour - 3 cups
  • Sugar-3 tsp.
  • Yeast-1 tsp.
  • Mix all the ingredients until smooth and place in a warm place to ripen .. it is better to take a large dish ... After 3 hours, the starter must be mixed. Fermentation time is 18 hours.
  • During kneading, you may have to add flour 2-3 tbsp. l ... next time I will try to reduce the volume of water.
  • Full cup 240ml, measuring spoons: table -15g, tea -5g.

In the absence of some ingredients (no malt, panifarin, Extra-R), I made changes .. added cumin ...
The result exceeded all my expectations !!! It rose well, slightly perceptible smell and taste of caraway seeds, average crumb, pleasant brown color .. Wonderful bread !!!

I looked ... Hour by hour is not easier ... Then it's better gluten there than that chemistry ...
Besides, we still don't sell such things. Only baking powder is sold, but it is for yeast-free baking

Well, in my baking powder, judging by the written composition, soda and food corn starch ... Literally: "Sodium acid Pyrophosphate, Sodium bicarbonate, Edible starch" I wonder how it all works on yeast dough. I usually use this to bake yeast-free biscuits and cookies.
