Ingredients

Wheat flour 280 gr.
Peeled pumpkin 250 gr.
Persimmon 2 pcs.
Eggs 1 + 2 squirrels.
Butter, took the margarine 100 g
Brown sugar 130 gr.
Baking powder 16 gr.
Nuts (I have hazelnuts 70 gr.) taste.
Ginger 1 tsp
Cognac 2 tbsp. l.
Salt pinch.
Raisins (not in the original) 100 g

Cooking method

  • Remove the butter from the refrigerator to warm to room temperature. Boil the pumpkin in a colander for a couple of minutes 15. Wash the raisins and dry on a towel. Fry the nuts, chop, crush to sprinkle.

  • Set aside for sprinkling from the total amount of products, 3 tbsp. l. nuts and granulated sugar. Beat butter with sugar and yolk. Peel persimmon. Grind pumpkin with persimmon with a blender, combine with oil, mix.

  • Sift flour, ginger and baking powder. Combine with pumpkin. If it is very liquid, add flour. (I did it differently. When I chopped pumpkin with persimmon, drained the juice and then gradually poured it into the dough.) Add nuts and raisins, 2 tbsp. l. cognac.

  • Beat the whites, mix gently. Put in a mold with a diameter of 18 - 20 cm, sprinkle with the remaining nuts and granulated sugar.

  • Bake at 175 C for 45 minutes. Willingness to check with a wooden skewer.

Note

When we tried this cake, we decided that there was not enough sugar and that we could throw in a handful of raisins. But somehow miraculously, by late evening, it decreased by 3/4, although I baked it at 6 pm. And in the morning, having breakfast with cake and coffee (it crunched so pleasantly), I thought that sugar should not be added either.
