Cream caramel in the oven

Ingredients

Caramel:
Sugar 1/2 tbsp.
Water 1/4 Art.
Cream:
Eggs 3 pcs.
Sugar 1/4 Art.
Vanillin 2/3 tsp
Salt pinch
Milk 3/4 Art.
Cream 1/2 tbsp.

Cooking method

  • The glass is equal to 240 ml. A glass from the LG bread machine went very much into the subject. It has all the necessary rice.
  • Sugar 1st. = 200 g
  • Caramel.
  • Oil four 125 ml ramekins.
  • Combine sugar and water in a thick-bottomed stainless saucepan. Bring to a boil, reduce heat, and simmer (without stirring) for about 5-8 minutes, until caramel is golden brown. Pour it into the molds immediately, as it will immediately harden and harden.
  • Cream.
  • Beat eggs, sugar, salt and vanillin into a light foam.
  • Bring the milk and cream to almost a boil and, stirring constantly, pour a thin stream into the egg mixture. Strain the cream through a sieve (there may be small particles of boiled eggs, but we need a soft creamy dessert) and pour into molds over the caramel. Place them in a large, high-rimmed shape. Fill the mold with boiling water, so that the water reaches the middle of the height of the small molds.
  • Bake for about 30 minutes, checking for doneness, like cheesecakes - the middle should wobble slightly with light shaking.
  • Cool the finished dessert, draw with a knife along the edge of the molds and turn over onto a serving plate. Serve both at room temperature and chilled in the refrigerator.

The first two times I tried to cook this dessert according to the book: "My Favorite Dessert" -Alexander Seleznev. It turned out to be a terrible muck with the taste of an egg amlet. Do not use the recipe in this book! And I had to run all over the Internet, looking for a normal recipe. Found

I also really love this dessert. There are many recipes for making it. But, it seems to me, I cook according to one of the simplest.
Needed: 5 eggs, 0.5 cups of sand, 1 can of condensed milk, 2-3 tbsp. l. water, vanillin.
In a saucepan (not enameled and suitable for the oven) melt the sand to brown caramel and, after removing from the heat, "rotate" the saucepan so that the caramel solidifies evenly on the sides and bottom. Beat eggs, condensed milk, vanilla and water (with which I previously rinsed the empty condensed milk can) and pour into the frozen caramel. Put in a water bath in a hot oven. Willingness to check with a knife - it must be removed clean. Cool, overturn on a plate.

Performed. Get it. From the same amount, I specially made two portions: one - in the oven, the second - in the cartoon. In the cartoon I did 30 minutes in a double boiler on "vegetables", in the oven - the same 30 minutes on a bath. And, although in the cartoon the water boiled faster than in the oven, in the second case the cream turned brown, and in the cartoon it remained light.
