Ingredients

tomato 2 pcs.
squash 1 small
pumpkin 1 small
onion 1 PC.
garlic 1 clove
olive. oil 2 tbsp. l.
soft cheese (I have yogurt) 2 tbsp. l.
eggs / minced meat 3 pcs. / 300 gr.
basil (not added) bunch
chili flakes taste
salt taste
pepper taste
greens for decoration

Cooking method

  • For this recipe, you'll need a cast iron skillet that's suitable for oven baking. Unfortunately, I don't have one like this, so I didn't bake it in the oven, but I'll write more about that.
  • 1. Pour olive oil into the pan.
  • 2. Chop the onion, chop the garlic smaller. Place them in a skillet and fry until golden brown.
  • 3. Grate zucchini and pumpkin, put in a bowl, salt, stir and put in a colander, leave for 10 minutes to drain excess water.
  • 4. Chop the tomatoes and add to the onion.
  • 5. When the vegetables are drained, add them to the pan. Cook for a few minutes, until tender.
  • 6. Add soft cheese, I think we are talking about curd (I added my own yogurt), mix. The cheese will spread and there will be something like sauce in the dish.
  • 7. Make some indentations in the vegetables and beat in the eggs. Deepening so that the egg mass gets inside the hodgepodge, so to speak.
  • 8. Then put the pan in the oven and bake for 10 minutes at 180-200 degrees. I just continued to cook on the stove.
  • 9. Decorate the dish with herbs (I have dried dill).

The recipe is simple and delicious. I don't know, maybe very simple, but I've never eaten grated stewed zucchini and pumpkin, all the more so. I'm just delighted, I will definitely cook more
