Ingredients

starter culture 100% moisture 120 grams
whole grain flour 100g
wheat flour 1 grade 240 gram
warm water 200 grams
honey 10 grams
dry yeast 1 gram
fine sea salt 10 grams
sunflower seeds 35 grams
pumpkin seeds 35 grams

Cooking method

  • My leaven is "eternal" wheat. The day before baking, I took 25 grams of starter, 25 grams of wheat flour and 25 grams of water. Stirred, left under the film. When the leaven had doubled, I took 40 grams and fed it in the same way. Left for 10 hours.
  • I kneaded dough from all products without salt. With a hook for 5 minutes. The dough is sticky. Left for 30 minutes under the film. I added salt and continued kneading for another 10 minutes. I poured 60 grams of fried sunflower seeds and waited for them to be evenly distributed in the dough, without ceasing to knead. The dough has stopped sticking. Stretched, folded and left under a shower cap for 90 minutes. During this time, stretched and folded 3 times. I formed a round bread and put it for proofing at room temperature 25 degrees, in the proofing basket with the seam up. She covered her with a hat. After 1 hour and 30 minutes, she turned it over onto baking paper, made cuts with a sharp knife, moistened it abundantly with water and sprinkled with the remaining ten scales of seeds. Together with a deep cast-iron frying pan, I preheated the oven to 240 degrees. She laid out the bread, covered it with a large enamel bowl and set it to steam for 15 minutes. Then she removed the steam, lowered the temperature to 190-200 degrees, removed the bowl and baked for another 25 minutes.
