The other day I met with the most unique delicious cabbage !!!
Called - Romanesco
These are stunningly beautiful, light-green, mesmerizing spiral cabbage-pyramids!

Romanesco cabbage (or cauliflower) and durum coils with cheese in Bork U700

Romanesco is a broccoli / cauliflower hybrid with a nutty-sweet flavor and no bitterness like broccoli. Although all the beneficial elements of broccoli are present in Romanescu - and these are isocyanates, which help fight cancer and other neoplasms. Up to 90% of isocyanate is lost during cooking, up to 80% - when cooking in a microwave oven, up to 50% - when steaming.
The only correct way is cabbage stewed in water for 5-10 minutes in a small layer of water.
Only in this way the loss of the anti-cancer component will be only 5-10%.

1. I cooked on a stand with water below (1/2 liter) on the program:
Steam - level 4 10 minutes, having previously disassembled a large pyramid into inflorescences.
It turns out that it is not so straightforwardly soft, who wants it softer, can close their eyes to vitamins a little and give 15 minutes.

If there is no Romanesque - replace with blanched color, will do too.

You can already eat ready-made cabbage like this - eating all the vitamins!
I adore it with black bread, salted with Himalayan salt, and again - with Chuchelkin sour cream sauce with dill and balsamic
But I didn't eat all - I left a few inflorescences for a wonderful compound dish with spirals and cheese!

2. We take spirals (or other twisted pasta) and always from HARD grades, the other kind will not work out so tasty! Pour a couple of tablespoons of vegetable oil into Bork's saucepan and spread in 2 layers, that is, one and a half or two centimeters. Do not forget to SALT and fill with boiling water so that the tops stick out.

3. We splash all this in a saucepan or stir, close the lid and set a wonderful program program Pilaf - what is so good about it - because it works quietly for about the first 20 minutes - nothing runs away from anywhere and does not steam. During this time, the spirals swell inside there.

Generally the program Pilaf in Bork 700 it goes well for 40-41 minutes and works clearly in 2 stages:
1 - 27 minutes = about 20 minutes of gentle warming up without pressure and then evaporates all the liquid! and exactly on the 27th minute, she releases all the steam!
2 - after 27 minutes it begins to fry - that is, then there is 13 minutes of light frying!

IN THIS WAY:
- whoever is in a hurry for any reason or loves unroasted pasta can open them in 27 minutes !!!
- I love fried - so I'm waiting for the end of the program!

4. Open and mix the spirals, stick in the Romanesco inflorescences and sprinkle abundantly and abundantly on top with grated cheese - I had a Russian one, but better than Kostroma - it's brighter!

5. The dish is almost ready - but we need to heat the cheese! Therefore, we close the lid and set the Oven mode - 1 level - minimum time 10 minutes and interrupt it in 3 minutes.
If the cheese has melted, everything is ready

Pour and taste quickly! It is delicious, even the sauce was not needed!

And yesterday my husband and I looked at this beauty, but I did not know what to do with it. So it's a very timely recipe!

Be sure to buy - it just needs to be tried!
It is similar to the colored one, but the colored one is more watery in comparison with the Romanesque.
Moreover, it is tastier and more pleasant than broccoli, and even cooler in terms of usefulness!

_________

Here is the composition of vitamins and minerals of this cabbage:
🔗

"What conquers the hearts of this cabbage, what is its chemical composition and useful properties?
It contains dietary fiber, carotenoids, vitamins C, groups B, K, E, A, micro and macro elements, antioxidants
Compared to cauliflower and broccoli, it has a more delicate structure, unlike other cabbages, it has a mild creamy nutty taste, which is very important for people who cannot stand the usual smell of cabbage.

Romanesco cabbage is the leader among cabbages in terms of vitamin C content (120mg / 100g), it is ahead of broccoli (80mg / 100g), cauliflower (40mg / 100g), and also has more carotene and mineral salts, but less fiber.

This cabbage contains many trace elements, in particular zinc, which is very important for people who suffer from a lack of taste.
In addition, Romanesco contains special substances called isocyanates that fight cancer cells.

So to summarize, Romanesco cabbage:

* helps to get rid of the metallic taste;
* restores the sensitivity of taste buds;
* promotes blood thinning;
* improves the elasticity of blood vessels;
* promotes the elimination of excess cholesterol, thereby reducing the risk of atherosclerosis;
* has a beneficial effect on the activity of the gastrointestinal tract (prevents constipation and diarrhea, stops the processes of decay and fermentation, etc.) "

After steam, the sharpness of cabbage fractals and chromaticity drop a little - so it's not so bad anymore, it's faster to mesyukai

Yulechka, thank you for opening the cabbage! I saw her at ATB, but somehow I was afraid to try it, it seemed that the taste would be like broccoli, but I already ate it so much.

Today I bought this cabbage and tomorrow I will prepare Chuchelka-Natasha sauce, and how I have not cooked it until now.

Oh, thanks for the tips! The other day they gave me this miracle, they said it was terribly useful. I didn’t know how to cook properly in order to save vitamins
gala10
And I made a casserole out of this cabbage. Since nothing is cooked in water at all, I think that vitamins have not gone anywhere ...
Oca
Alas, I have no dairy products, onions and sugar for this recipe.
