Ingredients

water + protein 1 egg 240ml
vegetable oil 3 tbsp. l
sugar 2 tsp
wheat flour 3m. glasses
dry yeast 2h l

Cooking method

  • load the ingredients into the bread machine according to the instructions. Dough mode. Remove the dough from the maker onto a floured surface and knead lightly to remove any fumes.
  • (Approximate bread machine mode: kneading for at least 15 minutes, then rest for at least an hour)
  • Divide into 12 balls (for small bagels).
  • Roll a sausage out of each ball and connect the ends (or poke a hole in the middle of the ball and spin the ring on your finger to enlarge it).
  • Let the bagels stand for 10 minutes, in the meantime turn on the oven at 200 degrees and boil the water in a large saucepan.
  • Dip the bagels into boiling water (the water in the pan should boil all the time) several pieces at a time and remove with a slotted spoon, no later than 15 seconds later, when the bagels begin to swell. If overexposed, they can lose their shape and burst.
  • Place the bagels on a greased baking sheet and cover with the beaten egg yolk frosting with a tablespoon of water. Sprinkle with poppy seeds (cumin, coarse salt, sesame seeds, etc.)
  • Place the baking sheet in the preheated oven for 20 minutes or when the bagels have a golden brown crust.

Note

Bagels are buns with a soft, stringy donut-shaped crust (to increase the crust surface) are very popular in Jewish cuisine and are widely reflected in folklore ("Buy bagels, hot bagels") :-)
You should pay attention to the economy typical of Jewish cuisine - if the products are coated with yolk, then the protein goes into the dough!
The soft crust effect is achieved by boiling bagels in boiling water before baking
