Ingredients

Flour 190g
butter soft 120g
yolk 2 pcs
powdered sugar 60g
sour cream 100g
baking powder 1 tsp
Filling
smooth curd 600g
sour cream 200g
powdered sugar 120g
vanilla sugar 30g
yolks 3 pcs
raisins 40g
zest of one lemon
protein 2 pcs

powdered sugar 90g

Cooking method

  • Grind butter, icing sugar and yolks. Add sour cream, stir. Pour baking powder into flour and sift flour over butter mass. Knead the dough. The cake pan should be large enough. the source of the recipe speaks into a 35x38cm mold. My shape is much smaller, somewhere around 32x27cm and the dough was enough for me end-to-end, you can say that I pulled it out on the form. I put a non-stick mat on the bottom of the mold, did not lubricate it with anything. Put the mass on a baking sheet and smooth with your hands. Chop with a fork and place in an oven preheated to 180g for 10-15 minutes. As a result, we get a semi-finished dough.
  • All components of the filling, except for protein, raisins and lemon zest, put in a blender and beat until smooth. Add zest and raisins, mix.
  • Beat the egg whites separately until firm peaks and gently add to the curd mass.
  • I didn't have biscuit crumbs, I put the cookies in a blender and ground them to the state of crumbs. In the recipe it was not clear where to attach these crumbs, so I acted on the principle: do no harm. With these crumbs, I sprinkled the semi-finished dough product, put the cottage cheese on top and put it in the oven for 35 minutes or until the cottage cheese gilded.
  • While the pie is baking, you need to take the remaining 3 proteins and beat until strong peaks, gradually adding the powder. Put the proteins in a pastry bag and put a mesh or patterns on the cake, well, in extreme cases of complete left-handedness, like mine, apply what happens. Bake until golden brown, about 10-15 minutes. In the resulting space, lay out beautifully apricot jam.
  • I know for sure that I have apricot jam, but I don't know where)). So I got by with cranberry jam, I love it too. Cool the pie well and cut it with a hot knife, otherwise the cut will not be beautiful, torn.
