Khachapuri (open version)

Ingredients

Dough:
flour 1 tbsp (about 160 g)
butter 100 g
sour cream 3 tbsp. l.
Filling:
cheese (feta cheese, sulguni, matsoni, ...) 300g
eggs 2 pcs.
milk 100-150 ml
sugar 2 tsp

Cooking method

  • The butter should be softened, but not melted. Chop all ingredients for the dough with a knife, form a ball with your hands. The dough does not need to be kneaded for a long time until it is completely homogeneous. Then the structure of the finished dough will be more layered and crumbly. Put the finished dough into a mold, form the sides.
  • Grate the cheese on a coarse grater, put it on the dough. Beat eggs lightly with milk and sugar and pour over the dough with cheese.
  • Bake in an oven preheated to 200 * until golden brown (about 30-40 min.)

Note

I baked in a silicone mold. I had a mix of goat cheese and Maasdam hard-type leftovers. It is better to take salty cheese, but not dry.

I tried this dish in this particular version at the age of 15. The hostess, who shared the recipe, said that she had been choosing and trying different options for a very long time, but her family liked this one the most. I liked it too, so I've been baking it for years ... 20. Try it too

Yes, the cheese will almost melt, so I think you can correct the liquid (replace eggs + milk with cream or sour cream) and probably slightly reduce the amount of liquid, otherwise the dough inside will really be dull, unbaked. Or for "bonding" try literally 1 tbsp. l. add a choice of flour / semolina / starch. Well, this is thinking out loud. I honestly didn’t use it myself
