  • In Italy, you can find Manitoba flour with a protein content of 21.53%, this is a very strong type of flour. The strength of the flour affects the volume of baked goods and the porosity of the crumb - the stronger the flour, the more porous, dense and elastic the finished product is. It is quite expensive and is suitable for baking panettone and other muffins that require particularly long proofing, up to 15 hours. Manitoba is the name of an Indian tribe and one of the regions in Canada that grows this special type of grain with a high gluten content. In Russia, it can be replaced with flour with a high protein content (13.5). Different manufacturers in Russia designate such flour in different ways - special, enhanced, extra.
  • Since I did not have Manitoba flour, but I had to use pumpkin somewhere, I just took "Lukhovitskaya" with a protein content of 10.3 and slightly adjusted the recipe.
  • Steam the pumpkin or bake in the oven, grind it with a blender and mix with yogurt, egg and sugar (I had powdered sugar, I used it).

  • Mix flour with cinnamon, add butter, salt and yeast. I was kneading the dough in a bread maker.
