Carrot-orange muffins with marzipan

Ingredients

juice and zest from one orange
juice and zest of half a lemon
carrot 150 g
almonds (peeled almonds) 200 g
flour 1 tbsp
corn starch 2 tbsp
eggs (large) 2 pcs
butter 85 g
sugar 50 g
powdered sugar 2 h l
candied orange peel 2 h l
orange blossom 1 tsp
light honey (liquid) 1 tsp
baking powder 1 tsp

Cooking method

  • 1. Grate the carrots, put in a saucepan, add the juice and zest of orange and lemon, honey and simmer all together over medium heat until soft. Then increase the heat, let the remaining liquid evaporate completely, then cool and puree.
  • 2. Grind the almonds to a flour state, add powdered sugar and proteins. Using a hand blender, beat everything together until smooth.
  • 3. Beat the softened butter with sugar into a fluffy mass, add the yolks and beat for another 2-3 minutes. Then, without stopping whipping, introduce the marzipan mass and, when the mass becomes homogeneous, add flour mixed with starch and baking powder in several steps. At the end of whisking, add carrot puree, candied fruit, orange blossom, reduce speed and mix until smooth.
  • 4. Fill muffin molds with dough by two thirds and place in an oven preheated to 180C for 20-25 minutes (bake until dry skewer).

  • Sprinkle the cooled muffins with icing sugar.

Long ago, in 2003, I left my husband and rented an apartment, so the Italian hostess shared the recipe for carrot pie, I altered it a bit and was very pleased with the result to this day.

250 g raw carrots
250 g wheat flour
250 g sugar
1 bag of vanilla sugar (or vanillin)
4 eggs
1 tsp Pure D'Orange Extrakt
zest of one orange
150 ml odorless vegetable oil
2 tsp baking powder
a pinch of salt
1) Preheat the oven to 180 degrees. Grease the form with a ring and sprinkle with flour
2) Peel and grate the carrots, punch into a paste in a blender.
3) Beat eggs in a mixer, add sugar, vanilla sugar, carrots on top, then butter and beat until smooth.
4) Without stopping whisking, add flour and salt sifted with baking powder. I continue to beat. Beat thoroughly, as long as possible. The finished mass should become like a puree, a beautiful orange color.
5) Pour the finished dough into the prepared mold, place in the oven and bake for 45-50 minutes. The cake should rise very well. Be sure to check the readiness with a toothpick.
6) Leave the finished cake for 5 minutes. in the turned off oven, then take it out and leave to cool in the form on the table.
7) Decorate the cooled cake to taste - with powder, chocolate or sugar icing.
Sorry, I didn't find the cut. For us, it is very tasty and beautiful, of course, everything still depends on the products.
