Mussel salad

Ingredients

Mussels 0.5kg
Eggs 3 pcs
Leaf salad 7-8 sheets
dry white wine 100 ml
red bell pepper 1 PC
parsley 1small bundle
cilantro 4-5 branches
medium onion 1 PC
salt
ground white pepper
garlic 2 slices
raspberry vinegar
Refueling
olive oil 4st. spoons
basil 7-8 leaves
juice of half a lemon
sugar 1 teaspoon without top
garlic 2 teeth

Cooking method

  • Simmer finely chopped onion and garlic in olive oil until transparent. Add mussels and wine, increase heat and simmer for 5-7 minutes. Transfer the mussels from the pan to a plate.
  • While the mussels are cold, prepare the dressing. To do this, chop the garlic, put it in olive oil, add lemon juice, sugar, finely chopped basil and lemon juice there. Mix well.
  • It is enough to finely chop the salad, peppers, tomatoes into slices, bell peppers and chop the parsley with cilantro. Put all the vegetables in a large salad bowl, pour the dressing on the vegetables, salt and pepper, mix gently. Place the mussels on top. Cut the peeled eggs into wedges and, when serving, put on a salad.
  • I ran out of raspberry vinegar, I did without it. I already had enough acid, so the sugar in the dressing is my gag.

Note

Not a bad salad, it has successfully replaced dinner
