Cake "A la Sacher"

Ingredients


Dough:
Flour110 g
Sugar80 g
Butter80 g

Cooking method


  • Beat the whites until firm. Postpone.
  • Beat the butter until fluffy, add melted (or grated, or melted chocolate, sugar, flour, then carefully stir in the proteins (do not beat with a mixer, otherwise the proteins will shrink).
  • Put in a greased and floured dish, bake at 140˚C for 40 minutes.
  • Cool, cut into 2 - 3 parts (secret: cut off the top, then turn the cake upside down, and leave it on a plate so that there is a neat shape and it is convenient to glaze it).
  • Syrup:
  • Bring water with sugar to a boil, boil.
  • Assembly:
  • Soak the cooled cakes with sugar syrup or compote syrup (peach, for example) and cognac / rum.
  • Fold the cakes into a cake, layering them with apricot jam and cover with icing.
  • Glaze:
  • Melt a chocolate bar or cook the syrup from sugar and water for 40 minutes, then gradually add chocolate (200 g) melted in a water bath, mix.
  • Chocolate decorations:
  • Squeeze the melted chocolate out of a paper bag onto a smooth surface (silicone mat, cling film, board, etc.), cool slightly in the refrigerator or freezer, carefully separate.
