French loaf (baguette)

Category: Yeast bread

Ingredients

Small size bread maker
For 1 loaf:
White bread flour225 g
(2 cups)
Water150 ml
(2/3 cup)
Salt1 tsp
Dry yeast1 1/2 tsp

Cooking method

  • A real baguette needs to be baked in the oven.
  • Average
  • For 2-3 loaves:
  • 315 ml (1 1/3 cups) water
  • 450 grams (4 cups) white bread flour
  • 1 1/2 tsp salt
  • 1 1/2 tsp dry yeast
  • Large
  • For 2-3 loaves:
  • 500 ml (2 1/8 cups) water
  • 675 grams (6 cups) white bread flour
  • 2 tsp salt
  • 2 tsp dry yeast
  • Directions: A French loaf is usually crispy and soft in the middle. Use the special setting on the French Bread Maker to get the right result.
  • 1. Add water to the mold. If your bread maker's instructions tell you to put yeast into the bread maker first, simply reverse the order in which you add dry and liquid ingredients to the bread maker.
  • 2. Add flour so that it completely covers the water. Add salt to the corner. Make a small indentation in the middle of the flour, missing water, and add yeast. Put the bread maker on the "French dough" setting, medium crust. Press the "Start" button.
  • 3. When the dough is ready, take it out of the bread machine, place it on a floured surface and hit it. Divide into two or three equal parts if necessary.
  • 4. Form each piece of dough into a ball, then roll out into a rectangle measuring 18-20 cm x 7.5 cm. Lift one third of the dough and fold, then press on the fold. Repeat 2 more times, being careful not to tear the dough and leaving it to rest between the folds.
  • 5. Gently roll the dough into a roll and stretch it lengthwise to make a 28-33 cm long loaf, depending on what size you want to make it. Place the loaf in a benneton or between a folded and floured corrugated towel to keep the loaf in shape as it rises.
  • 6. Cover with a greased foil and leave in a warm place for 30-45 minutes. Preheat the oven to 230 degrees C.
  • 4. Roll the loaves onto a floured baking sheet and place at a great distance from each other. Cut diagonally from above several times. Place on the top shelf of the oven and spray the oven walls with a spray bottle. Bake for 15-20 minutes until golden brown. Transfer to a wire rack and leave to cool.
  • On a note:
  • Use the French Bread mode if you do not have the French Pastry mode. Remove the risen dough and shape as directed in the recipe.

Time for preparing:

15-20 minutes

And today we made a baguette according to the classic recipe from our Clatronic bread machine.
Here's what happened.

Tell me, is the dough forming into a bun? And then I got like a sticky comma, all the walls in the dough. I added a little flour - and then stopped, maybe it should.
