Tender chops

Ingredients

pork / neck 700-800 g
milk 1 / 2-2 / 3 cup
salt 1 tsp
sugar 1 tsp
flour
eggs 2 pcs
vegetable oil
ground pepper 0.5-1 tsp

Cooking method

  • Cut the pork into portions, beat well. Prepare a mixture of sugar, salt and ground pepper, grate the chops with this mixture, put them in a bowl and pour over the milk. The milk should slightly cover the chops, even gaps are possible))
  • Leave to marinate for at least three hours, but do not hold for 24 hours. Before frying, breaded the chops in flour, then dip in an egg slightly beaten with a fork. Fry in vegetable oil until tender.
  • The chops are really tender and juicy.

I also do the same for the liver, only salt and pepper after it has been soaked in milk. Honestly, I never thought about keeping meat in milk good or bad, but I think it's not critical either.
