Eggplant salad

Ingredients

Eggplant (large!) 1 PC.
Pepper bulg. 1 PC.
Garlic 2 teeth
Lemon juice
Olive oil
Salt pepper
Cilantro (parsley)

Cooking method

  • Bake peppers and eggplant in the oven. (Eggplant pricked with a fork in several places so as not to burst)
  • Peel vegetables and cut with a knife. Garlic, through the press. If you are not a cilantro lover (like me), replace with parsley.
  • Salt, pepper, lemon juice to taste.
  • the salad is absolutely simple, but so delicious that you can eat it every day and won't get bored.
  • It's a pity that the eggplant season is over ...
  • I have not seen such a salad on the site, but if I suddenly missed it somewhere, delete it, pliz.

30-40 minutes. You will see the peppers brown and fall off. And eggplant can be pierced with a toothpick, you will understand by its softness. I turn it over once.
