Bread with beets on ripe dough (oven)

Ingredients

Ripe dough
wheat flour 150g
water 100g
fresh yeast 2g
salt 2g
Main dough
wheat flour 270g + 50g
rye flour 30g
fresh yeast 7g
ripe dough
water 30-40g
beet juice 30g
boiled beets 190g
sunflower seeds 60g
salt 8g

Cooking method

  • Ripe dough
  • Knead all ingredients until smooth. It turns out to be an almost dense bun. Leave at room temperature, covered with foil (lid 0, for 1 hour. Then transfer to the refrigerator. In the refrigerator, the dough should be at 5C, from 12 to 24 hours. 30 minutes before use, remove the dough from the refrigerator for acclimatization.

  • Transfer the dough to a container and let rise for 90 minutes. * Stretch-fold * after 45 minutes.
  • When finished, roll the dough into a ball. Place in a proofing basket, seam side up. Allow to rise, depending on the temperature, for 45-60 minutes
  • During this time, we heat the oven to 250C.
  • We bake the first 15 minutes with steam, or on a stone with a lid, at 250C.
  • Then remove the steam, lower the temperature to 200 and bake for another 20-25 minutes.
