Avocado cupcake with icing

Ingredients

butter 85 g
powdered sugar 200 g
lime zest and juice 1 PC
large avocado 1 PC
eggs 2 pcs
flour 200 g
vanilla extract 1 tsp
baking powder 1 tsp
soda 1 tsp
kefir 100 ml
salt pinch
for glaze
avocado puree 1/2 pc
lime juice 1/2 pc
lime zest 1 PC
butter 30 g
powdered sugar 100 g

Cooking method

  • 1 mixture. Beat butter and sugar, add avocado puree, zest and lime juice. While whisking, add two eggs one at a time, then the vanilla extract (butter and eggs at room temperature).
  • 2 mixture. In a separate bowl, sift the flour, salt, baking powder and baking soda together.
  • Mix 1 mixture and half of 2 mixture. Add kefir, then the remaining flour mixture, mix.
  • Put everything in a prepared form, level it.
  • Bake for 55 minutes - 1 hour in preheated 1800From the oven.
  • If the cake has browned too quickly, cover it with foil on top.
  • Remove from oven, then let cool for 15 minutes. Remove from the mold, leave to cool completely on a wire rack before glazing.
  • For glaze.
  • Mix avocado with zest and lime juice, add oil and beat together again. Gradually add the icing sugar, whisk well. Spread over chilled muffin and sprinkle with lime zest.

Note

Store the cupcake for no more than three days.

For me, baking with avocado was also an interesting discovery. In the cupcake, the taste of avocado is barely perceptible (here it is used more as a substitute for butter), but there is still some kind of original note. I liked the color of the dough, such a delicate pistachio, the photo does not convey very well. Due to powdered sugar, the cake is obtained with a crispy crust. I liked the glaze very much. It goes well with avocado with lime and powdered sugar. It seems to me that oil can not be added here, or very minimal. The glaze turns out to be soft, but if it stands in the refrigerator, it becomes denser.
