Ingredients

Boiled potatoes 2 pcs.
Bulgarian pepper 1/4 pcs.
bacon slices (I have smoked bacon) 100 g
Dijon mustard (I have mustard powder) 0.5 tbsp. l.
mayonnaise 1/2 tbsp.
sugar 1 tsp
salt 0.5 tsp
boiled chicken eggs 2 pcs.
celery stalk (replaced with dill + salad) 0.5 pcs.
small onion 0.5 pcs.

Cooking method

  • Best ever potato salad
  • 1. Cut potatoes, eggs, onions, peppers, celery (I did it without it - I don't like it, I replaced the dill + salad (we tear the salad with our hands). Best ever potato salad
  • 2. Cut bacon slices into 1-1.5 cm thick slices.
  • 3. Fry the bacon over medium heat until golden brown. Place on a paper towel. Do not pour the fat out of the pan yet.Best ever potato salad
  • 4. Making the sauce: add mayonnaise, mustard, sugar, salt to the blender bowl, add 1 tablespoon of bacon fat. Beat everything until smooth.
  • 5. Place chopped vegetables in a serving salad bowl, pour sauce over ingredients and stir gently.
  • 6. Chill in refrigerator for 3 hours before serving.

This is truly one of the best potato salads ever! Many thanks to the author for the recipe!
My version:
- celery left
- took the red onion
- I didn't make sauce. Tucked in the wonderful Romin Lean mayonnaise "Apple" ... Since it has a very bright taste (and I still didn’t regret mustard in it), I didn’t add anything
- the salad did not stand in the refrigerator. During cooking, the ingredients managed to "make friends" without losing the crispness of onions, peppers and celery. Therefore, exposure in the cold was canceled
- made 2 options: with fried bacon and with stewed lean pork (like boiled potatoes and eggs, it was left from the Easter table). What can I say? The options are different, but both are delicious - with bacon it is more spicy, pork is more neutral, but the taste and crunchiness of vegetables is brighter. I absolutely do not want to substitute chicken for bacon (the taste will "grease"), but the pork goes well here.
