Kranz with chocolate and hazelnuts

Ingredients

Dough:
dry yeast 1 tsp
wheat flour c. from 250 g
milk 150 g
egg 25 g
salt 0.5 tsp
sugar 40 g
butter 35 g
Filling:
chocolate 100 g
cream 22-35% 80 g
butter 30 g
roasted hazelnuts 50 g
powdered sugar 0.5-1 tbsp. l

Cooking method

  • Dough:
  • Bring the milk to a boil, dissolve salt and granulated sugar in it, cool.
  • Mix yeast with flour (leave one spoonful of flour out of the total), add warm milk, egg and knead the dough. Add softened butter and the remaining flour to the dough 8-9 minutes after the start of kneading. The dough is very soft, but non-sticky.
  • Tighten the container with the dough with cling film or put it in a plastic bag (tie the ends of the bag). Fermentation in the refrigerator for 10-12 hours.
  • Filling:
  • Grind the hazelnuts into small crumbs.
  • Heat the cream, bring to a boil, add the chocolate pieces and stir until smooth.
  • Add butter, nuts and stir again.
  • Any chocolate can be used: milk or bitter. I had Babaevsky chocolate with 60% cocoa content, so I added 1 tablespoon of powdered sugar to the filling. For milk chocolate, I would not add powder to the filling, it will be very sweet.
  • It is better to prepare the filling in advance when preparing the dough and put it in the refrigerator. In this case, it will be more convenient to work with it; when forming the fender, it will not make attempts to escape.
  • Before cutting, allow the dough to warm at room temperature for 60 minutes. The filling will take 30-40 minutes.
  • Roll out the dough into a layer 3-5 mm thick, apply the filling. Roll the dough into a roll along the long side.

  • Lay the roll seam down and cut with a sharp knife into two parts, not reaching the end of the roll on one side 2-3 cm. Unfold with slices up and twist into a plait.

  • Place the fenders in a dish lined with baking paper. Proofing under a foil 60-90 minutes until doubled.

  • Bake in an oven preheated to 220C (convection 200C) degrees with steam. After 8 minutes, lower the temperature to 190C (convection 170C) degrees and bring the fender to readiness. If the top is too red, cover it with foil.
  • Put the form with the finished fender on the wire rack and leave for 10-15 minutes, then, grasping the ends of the paper, remove the fender from the mold and put it on the wire rack (on paper).
  • Allow to cool completely before serving.

Note

The presence of cream and butter in the filling is a must! If you only use chocolate and nuts, the filling in the finished faucet will crumble.

PS There is an idea to use yolk or egg instead of cream and butter as a binder, but I haven't tried it yet.

For the first time the "ambush" came out - I poured the fillings - ground almonds with carob and chocolate, without regretting it. I twisted it, cut it, and due to the fact that there is a lot of filling, and it was dry, how everything fell out! Somehow I gathered in a heap, like a rose - oh! - I did it, sent it to the cartoon for two hours and baked it for 10 minutes. By evening, there was nothing left. There is a photo, I'll post it later.
