Curd snails with dried apricots

Ingredients

Dough:
dry yeast 1 tsp
wheat flour c. from 300 g
milk 140 g
egg 1 PC
sugar 30 g
salt 0.5 tsp
butter 30 g
Curd filling:
cottage cheese 200-250 g
sugar 20 g
vanilla sugar 10 g
yolk 1 PC
starch 1 tbsp. l
Apricot filling:
dried apricots 300 g
orange juice (or water) 160 g
sugar 20 g

Cooking method

  • Dough:
  • Mix yeast (I have a saf-moment) with flour (leave 1-1.5 tablespoons of flour from the total amount), add warm milk, salt, sugar and egg white, start kneading the dough. Add softened butter, yolk and the remaining flour to the dough 8-10 minutes after the start of kneading.
  • Curd snails with dried apricots
    In this case, do not roll out the dough too thin, otherwise it will tear during the last "curling".

Ksyusha, there is a pretty cut. The first time it was molded as expected, but because of this, the middle of the Grandma is uneven. For the second and third time, I skipped the last point, rolled the layer into two rolls to the middle and folded it. After proofing, the roll is even, but during baking, a small dip is obtained (along the entire roll), since the rolls that are one above the other increase in volume more than the middle. I will not show pictures of this disgrace, I took them down nafig from the memory card of the camera.

Baked in a detachable form 26 cm. I'm afraid they will be cramped in a multicooker and then it will not be possible to disassemble the pie into separate buns, only if you cut it into pieces with a knife.

I did it today. We liked it very much. In my opinion, a bit too much dried apricot puree, but not enough cottage cheese. Next time I will reduce dried apricots and increase cottage cheese. The dough is wonderful - tender, soft. Great recipe, thanks!

Yesterday baked I liked it very much. And I love dried apricots ... (the more, the better. Only baked with "Babka". Well, you need to master the molding. No photo - I baked it late, left it to cool ... In the morning I found it already "bitten".
