Pumpkin biscotti with dried apricots and nuts

Ingredients

flour 2.5 cups
brown sugar 1 glass
eggs 2 pieces
pumpkin puree 3/4 cup
dried apricots handful
walnuts handful
cinnamon 1 tsp
nutmeg 1/2 tsp
salt, vanillin by a pinch
cloves, ginger by a pinch
baking powder 1 tsp

Cooking method

  • Very tasty croutons and very spicy, I once again looked at the pumpkin with new eyes, reduced the sugar to 1/3 cup, the pumpkin is very sweet.
  • Preheat oven to 180 gr. Line a baking sheet with lightly greased baking paper.
  • Coarsely chop the dried apricots. Coarsely chop the nuts.
  • In a bowl, combine flour, sugar, baking powder, salt, vanillin, and spices.
  • In another bowl, beat eggs and pumpkin puree. Combine the pumpkin mixture with the flour mixture. Knead the dough thoroughly, adding more flour if necessary. Stir in dried apricots and nuts. Shape the dough into a log, transfer to a baking sheet (line with lightly greased baking paper) and flatten slightly.
  • Bake for 25-30 minutes, until firm to the touch in the center. Let cool slightly and then cut into medium slices. Put on a baking sheet and dry at 150 gr. another 15-20 minutes.
