Turron de yema guemada

Ingredients

almond 250 g
sugar 320 g
water 100 ml
egg yolks 4 things
cinnamon 0.5 h l
zest with one lime and half a lemon
brown sugar for the crust 2-3 tbsp
form 24 by 10 cm

Cooking method

  • 1. Peel and grind the almonds into small crumbs. Add cinnamon and zest and stir until smooth.
  • 2. Boil the syrup from water and sugar to 120C. Beat the yolks lightly (just a minute, until smooth). Then, without stopping, whisking at high speed, pour in a thin stream of syrup - after 3-4 minutes the mass will brighten, increase in volume by 5-6 times and become lush, silky, airy.
  • 3. Introduce ground almonds into the finished yolk mass in several stages, mix until smooth and put in a saucepan. Put the mass on medium heat and, stirring continuously, warm it up until the moment when it begins to lag behind the walls of the saucepan - the whole process takes literally a couple of minutes.
  • 4. Put the hot mass in a mold, previously lined with baking paper, and leave to set at room temperature (I leave it overnight). Sprinkle the finished turron with brown sugar and make a caramel crust using a pastry burner (or simply sprinkle with powdered sugar).
  • Store in an airtight container.

Note

Turron is a traditional Spanish Christmas treat dating back to the 16th century. Today there are many varieties of it, although the traditional Turron de Alicante (very hard) remains the most common. The same version is soft, with a very delicate texture. Try it, it's delicious!
