Rowan Pastila

Ingredients

Rowan red 1 kg
Sugar 1 kg

Cooking method

  • Rinse and sort out the mountain ash. Boil bitter mountain ash for 5 minutes in boiling water, then drain. Add 1 cup boiling water. After boiling, cook for about an hour.
  • With a blender, turn the mountain ash into puree.

  • Pass through the combine (I have such a nozzle for mashed potatoes in the Boshevsky Profikubix) or through a sieve the resulting mass. We collect the cake and throw it away "in the process".
  • Rowan Pastila
  • Lubricate the tray with olive oil (lightly). Put it in a THIN layer on a tray in the dryer (I have Isidri). Dry by preheating the dryer at the maximum temperature.
  • I roll the finished marshmallow with a tube and wrap it in plastic wrap. I store it in the refrigerator.
  • Rowan Pastila

Time for preparing:

1 hour 30 minutes + drying 12-24 hours

Note

Leveling the dryer will make your life easier. Drying takes approximately 12-24 hours. Much depends on which layer of rowan you put in and whether it has been boiled during cooking on the stove. I do not recommend using the microwave if you want to get an ecological product.
Remove from the dryer tray only when the pastille has cooled.
If the marshmallow is dry, that's even better, then you can break it into pieces.
If you forget to grease with oil or it will be difficult for you to peel off the finished marshmallow from the tray, you just need to put it on a cold table outside (if you are in the country) or on a wet rag. Will go away, how cute.
I recommend for everything and always use only extra virgin olive oil, everything else leaves not the most useful traces of difficult to clean. And do not cook in aluminum pans. Especially berries, apples - everything is sour.

My husband chose my husband and chose the largest Isidri - Ultra FD1000 (in general, it is "easy to dry" - easy to dry! But in New Zealand, apparently, it is somewhat different). The set included 5 sections on which everything is put, 5 trays and 5 nets, and plus they bought everything gradually. Now we have 12 sections, 7 trays (for marshmallows), 10 nets for drying herbs (the flowers of ivan tea turned out to be very tasty, I regret that I dried a little, and the leaves of ivan tea were fermented by my husband). In the fall, the dryer performed three functions at once - it made blanks, warmed the "canopy" and scared off mice.

Now we decided not to buy sweets - we will eat marshmallow, I have all sorts of it. I really liked the rowan!
True, it was necessary to blanch it longer - there is bitterness, like from pepper. But on the other hand, it does not allow to overeat, and it, this bitterness, is very spicy.

Try to make it out of blackberry and unsubscribe. We are all interested! I just have a new dacha, we don't have a blackberry here. There are, however, the neighbors. - water after rowan can not be poured !!! Therefore, immediately pour good water and then drink the resulting drink as compote or jelly.
Well, now the toad is strangling - it is clear that you need to treat your friends, but it's a pity ... :-)))) The taste is indescribable ...

Now I read my posts, my advice to collect rowan in advance. Ha! Actual! I haven't eaten rowan marshmallow for several years already: the birds eat everything completely. And I, because of my sluggishness, remain without mountain ash marshmallow. But we planted the Titan rowan hybrid. I tried a couple of berries this year. Sweet! So we will wait for the fruits next year, and it will be possible to put less sugar. About when to put it - it logically turns out that after filtering before "blending". Otherwise, all the sugar will remain in the water. Of course, it will also be used, but there it is better to use other measures for sugaring.
