Caramel rolls

Ingredients

Dough:
Milk 250 g
Wheat flour 100 g
Dry instant yeast 4 g
Maltose syrup (honey) 35 g
Dough:
Opara all
Wheat flour 325 g
Sour cream 20% 50 g
Sugar 50 g
Melted butter 50 g
Salt 1/2 tsp
Vanillin 1/4 tsp
Caramel:
Butter 100 g
Sugar 100 g
Maple syrup (honey) 1 st. l.
Cream 33% 1 st. l.
Filling:
Melted butter 30 g
Sugar 2st. l.
Cocoa* 2st. l.

Cooking method

  • For dough, heat the milk to 45C, add all the ingredients of the dough, beat until smooth, cover and leave for 30 minutes.
  • For the dough, add all the other ingredients to the dough. Knead 2 minutes on low speed, 7 minutes on high. I kneaded in Thermomix.
  • Form a ball out of the dough, grease with oil, put in a greased container, cover and leave for 30 minutes at a temperature of 30C.
  • Then knead the dough, fold, return to the container and leave for another 60 minutes.
  • For caramel, pour sugar into a bowl with a thick bottom, put on high heat, do not stir. Wait until the color changes to brown, stir. CAREFULLY add butter, cream, syrup, stir and boil for 1-2 minutes, stirring occasionally.
  • Pour the caramel into a mold. I have silicone, d24cm. Better to take 26-28cm.
  • Peel the apple and peel. Cut into small pieces. Pour over caramel.
  • Put the dough on the table, if necessary, grease the table with oil, roll it out into a layer 50x30 cm.
  • Lubricate with oil.
  • Mix sugar with cocoa, sprinkle over butter.
  • Roll up the roll along the long side. Cut into small pieces. I got 16 pieces.
  • Place the rolls at a distance from each other on top of the apples.
  • Cover the tin with foil (not tightly) and leave for 20 minutes.
  • Bake in an oven preheated to 200C for 20 minutes, then remove the foil and bake until tender. The exact time depends on your oven. I have 20 minutes.
  • Remove the form from the oven, leave for 5 minutes. Turn gently onto a platter.
