Oat flakes 100 g
Granulated sugar 80-90 g
Egg 1
Sour cream 2 tbsp. l
Butter (cold) 60 g
Baking powder for the dough 1 tsp
Soda 0.5 tsp
Lemon juice 1 tbsp. l.
Cinnamon 1 tsp
Cardamom 0.5 tsp
Salt pinch
Grated carrots (pressed) 200 g

Cooking method

  • I must say that we have excellent recipes for scones on the forum. But I decided to bake them with carrot cake and oatmeal. Every autumn I solder my family with fresh carrot juice and there was always cake, which I usually threw away. And then, once again, having made juice in the morning, I thought it was a disgrace to throw out a healthy product at a time when nutritionists only talk about the fact that our diet lacks dietary fiber and advertise all kinds of dietary supplements.
  • And I decided to use it with benefit in baking.
  • It turned out beautiful scones, excellent pastries for breakfast.
  • 1. In a bowl, combine flour, cereal, baking powder, salt. Finely chop the cold butter and add to the flour.
  • 2. Beat the egg and sugar with a fork. Redeem soda in lemon juice and mix with sour cream. Add carrot cake.
  • 3. Mix 1 and 2 and quickly knead the dough, not too zealous, you can do it with a mixer on the impulse, or with your hands. Important. to keep the butter in small pieces. This will give the dough the characteristic flakiness of the scones during baking.
  • 4. Make a round cake out of the dough. You can put it in a mold with a diameter of 24 cm, press the pieces of dough with your hand, and then turn on the table. To prevent the dough from sticking, put oiled paper on the bottom, which then carefully remove.
  • I made a cake with just my hand.
  • Cut into 8 segments and use a spatula to gently transfer to a baking sheet covered with baking paper.

  • 5. Bake in a hot oven at 220 ° C until lightly browned (do not dry out), about 20 minutes.
  • I sprinkled brown sugar on top before baking, you could make icing, add raisins or cranberries, cherries, nuts if desired ...
  • And this is a little about scones from Wikipedia
  • Scone is a small British instant bread traditionally made in Scotland and the southwest of England. It is usually made from wheat, barley, or oatmeal, with baking powder as an edible baking powder. Skon is the main component of the so-called Devonshire cream tea.
  • Initially, scones were prepared round and flat, usually the size of a medium-sized dish. They were made from unleavened oats and baked in a frying pan, then cut into triangular pieces and served. Today, many would call a large round bread of this kind "bannock", and its pieces the word "scone". In Scotland, both words are often used interchangeably.
  • When the baking powder became available to the masses, the scones began to cook in the oven. Modern scones are widely available in British and Irish bakeries, grocery stores and supermarkets.

Note

I must say that the carrots are not felt at all in the dough. The child, who cannot stand carrot baked goods, decided that they were cooked with nuts and smiled with a cup of chocolate. I liked that they are not sugary and great
go well with coffee, although those with a sweet tooth can increase the amount of sugar.
It is also very fast and convenient, with health benefits. So bake to your health!

And I also didn't know what to do with the cake after making the juice. I wonder if apple can be used like that too? Thanks for the recipe! I will definitely try!

I didn't make apple cider, so I don't know Pekla from mixed, but carrots prevailed there.

Thanks again!!! By the way, the question is off topic. Why do you drink carrot juice in autumn? Precisely in the fall?
barbariscka
Because there are fresh carrots, juicy, tasty, local. In winter, it is mainly brought from abroad; by spring, little useful is preserved in it ...

And we, too, from late August to mid-October, almost daily drink carrot-apple juice (about half). How much cake was wasted!

We also drink carrot juice and a lot of cake remains, but I never threw it away. In the fall, every morning we drink juice, and cake in the freezer. A large batch of oilcake is collected - everything in a bowl for jam, I add apples (I scroll them through a meat grinder), sugar, if necessary (I do everything to my taste) and cook the filling for the pies. I put it in jars, sterilize it and roll it up with iron lids. For many years I have been doing this and everyone really likes this filling in pies and pastries, and guests can never guess what kind of filling it is!

I also don't throw away cake, for example, as I use for chips. And I also add the dog to the food when I add porridge with meat. https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=389498.0
In general, we are lovers of scones, both sweet and savory. I will try your recipe too - I really liked the composition.

Good day! I will report to you! I baked scones today and I am very grateful. It's incredibly delicious! I made the layer thinner, sprinkled with dried cranberries and folded it in half. Sprinkled with brown sugar and cinnamon on the top! What aroma was there when baking Skonov turned out to be less, but they are high. Tiny, sweet, smelling ... to me! Thanks for the recipe.
barbariscka
Irina, thanks for the report! I am glad that the recipe was to your taste. Cranberries and cinnamon brown sugar really do work, and creativity is always welcome. To your health!
