Ingredients

One piece of pork (ham, neck) 1.5KG
Garlic 3-5 cloves
Salt 1.5-2 tsp
Bay leaf 2-3 sheets
Spices: coriander, allspice and peas, mustard seed, paprika, cumin taste
Sour cream 20% (or kefir) 2 tbsp. l.
Chilli ( 1 pod

Cooking method

  • Wash pork (choose fat content to taste) and dry thoroughly with paper towels.
  • Chop spices, a part of garlic, chili and bay leaves in a mortar and mix with salt. Grate the meat with this mixture and coat with sour cream (or kefir). Marinate the meat in the cold for 24 hours, placing it in a suitable dish or immediately wrapping the meat in foil, parchment or a baking sleeve (so as not to stain excess dishes). For example, I really like to wrap it in parchment, making a few turns. In parchment, in contrast to foil, the meat is reddened evenly and without unrolling. When wrapping, line the meat with garlic wedges, chili peppers and a couple of laurel leaves.
  • Bake boiled pork in the oven or airfryer (planting in a cold AG) at a temperature of 180 * C for 1 hour 30 minutes. Cool and let it mature for a while in the refrigerator (for cold cuts). But such boiled pork is very tasty and hot.

Note

A certain amount of juice will stand out from the meat during cooking. I suggest not pouring it out, but cooking stewed potatoes on it, for example, in a slow cooker / pressure cooker. Or use it as a gravy for a side dish (rice, buckwheat, pasta) when using boiled pork hot.

I did it last night and all night long the meat came in the airfryer. In the morning I got it ... then only mooing
Very juicy and tasty. The only "BUT" I baked two pieces at once and set the time for 2 hours - the meat was slightly tanned on top, but still not overdried, which is the main thing.
