White cabbage 5 Kg
Bulgarian pepper 1 kg
Bulb onions 1 kg
Carrot 1 kg
Vinegar 9% 200 ml
Vegetable oil 0,5 l
Sugar 250 g
Salt 4 tbsp. l

Cooking method

  • Cut the cabbage, peppers and onions into thin "noodles", that is, chop the cabbage, cut the pepper (more beautifully multicolored) in half and then each half thinly across, the onion into half rings. Grate the carrots on a coarse grater, or even better - on a Korean grater. Mix everything in a basin, put under oppression for 3 days, then put in jars, close with nylon lids. Stores even outside the refrigerator for 3-5 months.

The recipe was sent to me 15 years ago by my mother, her eternal rest. Then, and even in the Arctic, this fresh salad was a "gift" to the family table for several months. Now, of course, fresh vegetables are on sale all year round, and yet the salad is worth preparing: it is tasty, aromatic, just fresh, vegetables do not ferment, and this taste and crunchy texture do not change over time. 15 years ago, my friends, coming to visit, demanded this salad right from the door. I am making such a preparation now, however, in smaller quantities ... This salad helps out very much when the dining table asks for vegetables, but there is no time to make a vegetable salad, and boiled (from cans) salads temporarily do not inspire ...

Girls, I have been making such a salad for many years - one drawback is that it needs a place in a rubber refrigerator, I rub carrots on the loin and everything turns out to be a vermeshka, only I increased carrots, onions and peppers to 2 kg by 4-5 kg ​​of cabbage. Without a refrigerator, it begins to ferment, only in the Arctic it will be stored for 3-4 months without a refrigerator - there is a refrigerator all around.

Girls, I have been making this (or similar) salad for VERY many years (about 20), so, my mother and I just left it warm overnight (just in the kitchen under a lid so that nothing would get hit), in the morning we laid it out in jars (0 , 5-0.7 l) and sterilized literally 20-25 minutes. Only jars I take with screw lids, it is stored perfectly in the basement and refrigerator until spring. I especially love to make it from early ripening cabbage (when the main harvesting has not yet begun, and this cabbage is already ready), it is stored perfectly
