Ingredients

Water 60 g
Vegetable oil 10 g
Salt 1/5 tsp
Sugar 10-30 g
Flour 130 g
Corn starch 20 g
Baking powder 0.5 tsp
Vanillin little pinch

Cooking method

  • Warm the water slightly, dissolve sugar, salt in it, add vegetable oil, flour, starch, baking powder and vanillin. Knead a dense dough as for dumplings. Let it rest for 15 minutes.
  • Now roll out thinly ~ 2-3 mm. I roll out on a noodle machine at a thickness of 3. Cut the cookies. Sometimes I make a round one, and more often (this is faster) I put dough sheets on a baking sheet and divide them into cookies with a wheel for pasties:

  • If you do this, then one portion of the dough is enough just for one 38x38 baking sheet. If it is round, then all the cookies will not fit into one baking sheet.
  • Now you need to bake the biscuits correctly. It is important!
  • In principle, biscuits should not be baked like ordinary cookies, but dried like crackers. That is, the oven temperature should not be high, somewhere around 130-150 degrees (depending on the oven). The cookies should not change color to brown, the bottom and top will be the same color, very slightly ruddy. Dry for about 30-40 minutes.
  • Correctly cooked biscuits are tasty, crispy, but not crumble. If you bake them incorrectly, you will get biscuits with a taste of flour.
  • Here are they inside (not a very beautiful color came out, but the structure is better seen this way):

  • These are cookies with 10 g of sugar, they are practically not sweet. If you want it like in a store cookie, then you need to put 30 grams of sugar.

Keep in mind, if you bake, that when you open the oven during baking, ammonium comes out of it in a very strong, odorous wave. It is better to dissolve amonium in milk, and not to put crystals in the dough - although this is not spelled out in the GOST either, it seems to me that this is better.

The dough does not stick at all and, if it lies down, it does not float, but keeps its shape well.
