Pepper with feta cheese in Mediterranean style

Ingredients

bell pepper sweet 3 pcs
soft cheese or feta 150 g
greens (dill, parsley, cilantro) taste
olive oil 30 ml
vinegar essence 0.5 tsp
salt 1 tsp
sugar 1 tsp

Cooking method

  • Cut the peppers into 4 pieces lengthwise, cut the stalk, seeds and white partitions.
  • Mix oil, vinegar essence, salt, sugar in a bowl, coat pepper quarters with this marinade. Leave to marinate for half an hour.
  • Preheat the oven to 180 degrees, put the pepper on a baking sheet, skin side down, pour over the remaining marinade, bake for 30 minutes.
  • Based on the results of cooking from peppers of different fleshiness (seasonal and non-seasonal), I want to warn you: these 30 minutes are not always enough for the pepper to bake. Look for actual doneness: the slices should be soft enough to easily roll into rolls.
  • Make sure that the skin does not burn (we will not remove it). After baking, let the pepper cool completely.
  • Mash cheese with a fork, mix with chopped herbs. Spread the filling with a teaspoon in that part of the pepper slice where there will be a small depression, cover with the second half, tuck in a roll, stab with a skewer or a toothpick. Serve as a snack, drizzled with olive oil on top.
  • If it suddenly turns out that the pepper is not soft enough, and does not want to keep the shape of the roll, try to just cover the stuffed part with another, and put it in a bowl under oppression. In a couple of hours the snack will "learn" to keep its shape.
  • On the second day, the peppers are even tastier.
