Ingredients

Dough:
Flour of the 2nd grade 200 g
Serum

Peeled rye flour 3 tbsp. l.
For the test:
Flour of the 2nd grade 300 g
Serum 50 ml
Salt 2 tsp
1/2 tbsp honey l.
Dry yeast 1/2 tsp

Cooking method

in the evening I put the dough, for which I dissolved the yeast in warm whey. Sifted flour, added bran and rye flour. She mixed the dry components, poured whey with yeast into them, mixed everything until smooth. I left the dough at room temperature. In the original it was said that the dough should stand for 8-16 hours, but it seemed to me that it would oxidize during this time. After 4 hours, I put it in the cold, in the morning I put it in the room, while I sifted the flour and prepared everything for the dough, it already began to come up again.
Preparation of the dough itself:
In 50 ml of warm whey (it turned out a bit too much, I had to add 2 tablespoons of flour when mixing) dissolve 1/2 tablespoon of flour. l. honey and 1/2 tsp. yeast. Sift 300 g of flour directly into a bucket, add 2 tsp. salt and mix. Pour out all the dough and whey with dissolved honey and yeast.
We turn on the program Pelmeni, knead the dough. We need to watch the kolobok. After adding 2 tbsp. l. flour bun turned out to be good, but sticky. She pulled out the dough from the bucket, kneaded it on a sprinkled board and put it back in the bucket, but without the spatula. The dough went very well, for an hour I kneaded it 2 times, then let it come up almost to the edge of the bucket and put it on the Baking for 65 minutes.

Preparation:

then I added everything for the dough, dissolving yeast and honey in fermented baked milk and set the CONTINENTAL program (1Kg kneading 1 - 5min, kneading 2 - 20min, rise 1 - 40min, 10sec, rise 2 - 20min, 5sec,
rise 3 - 70min, baking - 120min, baking temperature - 80-150C, total time - 4hrs35mins)
during kneading added 2.5 tsp. water
