Ingredients

Dough
Flour 3 tbsp.
Water 1/2 tbsp.
Salt 1/2 tsp
Fat (vegetable + drain oil 1: 1) 1 tbsp.
Filling
Chicken fillet 400gr
Pumpkin 300-400gr
Onion 2 pcs.
Salt, pepper, cumin taste
Egg for greasing the dough 1 PC.

Cooking method

  • I am sharing a recipe for an interesting and tasty dough. In the book where I found him, the author calls him unleavened fat dough... Any filling, I have chicken and pumpkin.
  • Mix flour with salted water. It will turn out to be such a rough crumb. Pour a hot mixture of oils on top of it. I put slices of butter in a cup, bring to the desired volume with vegetable oil and heat in the microwave. Knead the dough quickly. It turns out to be soft and fat. Put it in a plastic bag and let it rest for 20-30 minutes. Then you can sculpt pies. I tear off pieces the size of a tennis ball and roll them out thinly. There is no need to dust the table with flour. Do not lubricate the sheet. I absolutely do not manage to "curl" them beautifully, but there is a point in such modeling - it prevents the pies from sticking out when baking.
  • The filling is not traditional, although these pies can be made with anything.

  • My opinion is that the filling should not be too wet or too greasy. There is enough fat in the dough, and moisture will soak the bottom. So, I cook with chicken, or medium-coarsely chopped with a knife, or minced through a coarse mesh (4 holes), pumpkin, diced 0.5X0.5 cm, and onions. If it's a fillet, let me add some mayonnaise to the minced meat. Salt, pepper, favorite cumin. Put the filling generously into the dough.
  • Grease the pies with an egg before baking. Bake at 200 * C for 30 minutes.

The dough is cool. Something in between flaky and sandy. Very easy to prepare and enjoyable to work with. The pies are good both hot and cold. Eating carefully, easily and imperceptibly, an overdose occurs

Since the filling is "author's", the number of products is taken "by eye". The filling may remain, which annoys me ... Then I add to it a little grated cheese, a little mayonnaise, the rest of the egg from the grease, put this mass into silicone muffin molds, place the molds between the pies and send them to the oven. It turns out a wonderful taste of cutlets.

What a wonderful recipe! In this form, I have not tried the dough, I tried to add cream cheese in a larger volume instead of fat (Mushroom Autumn pies, have been around the Internet for a long time), as far as I understand this is a variation of the Karaite dough.
