Plum chocolate mousse

Ingredients

plums (ripe sweet) 400 g
+ for decoration 6 pcs.
chocolate (preferably 70% cocoa) 400 g
butter 50 g
dry red wine 0.5 cups
cream (20%) 150 ml
honey 4 tbsp. l.
sugar (brown) 1 tbsp. l.
cinnamon pinch

Cooking method

  • Cut the plums in half, remove the seeds, put in a small saucepan. Add sugar, cinnamon and wine, put on high heat. Bring to a boil and cook for another 4-5 minutes, until the plums are soft. Transfer the contents of the saucepan to a blender, chop into a coarse puree.
  • Pour cream into a saucepan, put on low heat. Add chopped chocolate into small pieces and cook, stirring constantly, until chocolate melts. Remove the chocolate mass from the heat, add butter cut into small pieces, after 30 seconds add butter puree. Stir quickly. arrange in molds or coffee cups and cool to room temperature, then refrigerate for 30 minutes.
  • Cut the plums for decoration into 6 pieces each, remove the pit first. Honey with 2 tbsp. l. Bring water to a boil in a small saucepan, bring to a boil, put plums, simmer on minimum heat for 5 minutes. Cool completely in honey. When serving, place plum wedges for each portion.
  • My remarks: I made this dessert several times, in my opinion, this is the proportion of plums / chocolate for the most devoted chocolate addicts), since plums are almost not felt, I reduced the recipe rate by 2 times (a large portion is obtained from the full rate), but plums I left 300 g, and the last time the whole amount (I reduced the rest of the products by 2 times, took 10% cream) it turned out very tasty with a noticeable plum taste. If you prepare dessert in advance, it is better to take it out of the refrigerator and let it warm up for an hour, it tastes much better than straight out of the refrigerator.
