Ingredients

Pork carbonade 1.2-1.5 kg
Salt ~ 1 tsp
Ground black pepper (pepper mix) taste
Ground curry 1 tsp
Khmeli-Suneli 1 tsp
Bay leaf 2-3 pcs.
Pepper and allspice 3 pcs.
Garlic 2-3 teeth
Olive oil ~ 1 tbsp. l.
Roll of parchment paper nothing to replace

Cooking method

  • I advise you to use the amount of seasonings and spices to your liking!
  • Wash the carbonate and pat dry with paper towels.
  • Salt to taste. Sprinkle with black pepper (or pepper mixture).
  • Spread the carbonade on all sides with olive oil (I sprayed it with a spray) and coat with curry and suneli hops, rub the spices into the meat.
  • Cut the garlic into slices.
  • Take the parchment (use the parchment) and spread it on the table (do not cut it off the roll).
  • Departing from the edge of 15 cm, put on the parchment cloves of garlic and peas and allspice.
  • Put the prepared chop on top.
  • Put the garlic cloves, peppercorns and bay leaf on top of the carbonade.
  • Wrap the parchment, folding the edges, in 3-4 layers. And only then cut off from the roll.
  • You should get a roll - a bar.
  • Send to marinate in the refrigerator for 6 hours or more. (I was able to stand 6 hours.)
  • Place the bar on the lower rack of the heated airfryer.

  • Bake at 180 * С 1: 20-1: 30.
  • Cool at room temperature. And put in the refrigerator for ripening for 5-6 hours.
  • Do not unfold the parchment! The juice released during ripening will be absorbed back into the meat and make it juicier.
  • Eat as cold cuts - a snack!
