Ingredients

Dough:
dry fast-acting yeast 1.25 tsp
wheat flour c. from 350 g
milk 200 g
honey 50 g
salt 0.75 tsp
butter 40 g
For the top:
milk 1 tbsp. l
sesame 2-3 st. l

Cooking method

  • Add salt and honey to warm milk, stir.
  • Add yeast (I have a saf moment) and flour. Leave one tablespoon of flour (of the total), it will need to be added to the dough a little later.
  • Start kneading the dough. As soon as all the flour is evenly moistened and the dough is gathered into a single lump, stop kneading and leave the dough alone for 5-7 minutes.
  • Add soft butter (room temperature) and remaining flour. Knead a soft, elastic, non-sticky dough.
  • Fermentation 90-120 minutes with one kneading in the middle of fermentation.
  • Dust the table a little with flour, lay out the dough, knead and divide into 3-5 equal parts (I have 3 pieces of 231g each).
  • Roll each of the parts, stretching into a plait, about 30 cm long and braid them into a pigtail.
  • Transfer the dough piece to a baking dish or baking sheet lined with parchment.
  • Proofing 45-60 under a film to increase the volume by one and a half times.
  • Before planting in the oven, grease the top of the braid with milk and sprinkle with sesame seeds.
  • Bake at 220C (convection 200C) degrees for the first 10 minutes with steam. Then slightly open the oven, release excess steam, drop the temperature to 200C (convection 180C) degrees and bring the bread to readiness. Total baking time 35-40 minutes (be guided by your oven).
