Ingredients

Flour psh. 600 g
Fresh corn (grains) 250 g
Water 250 ml
Honey / molasses / sugar 25 g
Salt 12 g
Yeast dry. (light - 10 g) 1h l.

Cooking method

  • I think I already mentioned that we love oven bread, and I used the bread maker to its fullest only for the first 4 months - until I bought a new oven ...
  • So - this bread the only one that I only bake in a bread maker, and the oven deprives it of juiciness, oddly enough ...
  • On the Internet, I did not find bread with FRESH corn and I think that I will be the first to share with you the recipe I have worked out ...
  • So:
  • Corn must be of milky ripeness, that is, the one that is boiled on the cob for nibbling and which is sold (grains) frozen.
  • Grind the corn kernels in a blender / processor to a gruel state and combine with water sweetened with honey / molasses / sugar.
  • Then follow the instructions for your bread maker: I first load the corn mixture, then 200 grams of flour, salt evenly on top and sprinkle another 300 grams of flour and on top of it - just as evenly as salt - yeast.
  • (If you have fresh yeast, dissolve them in 100 ml. Sweetened water + 2-3 tbsp. L. Flour and check their performance: good yeast will rise with a cap in 15-25 minutes in the heat. Combine them with the remaining water and corn and further as described above).
  • I add the remaining 100 grams of flour during the kneading process, tracking the appearance of the bun (flour is very dry or corn is very juicy).
  • And five minutes before the end of the batch - a couple of tablespoons of corn oil.
  • I turn on program 5 (French bread) - this is a full cycle of white bread - and after 3 hours 30 minutes. ready sunny and juicy loaf!

We have been enjoying this bread for the third year
And we like it so much that I bake it even after the end of the corn season - fortunately, frozen corn is not a problem these days.

This is one of my most successful experiments for several reasons:

1- this is the only bread baked by me that turns out better in a bread maker than in an oven (for the third year I am surprised at this)

2 is the best alternative for those who love corn, but who do not like the dryness and loss of firmness of the crumb due to corn flour (my family for the same reason does not like bran in bread ...).

3 - the bread is tasty, sunny yellow, juicy, but not wet ... and with gold! in trace element composition ...

Kneading and baking was done according to the "Kubinsky" technology from Omela, (Ksyusha) in a cast iron pan. I counted it for 500 g of flour.
