Ingredients

Finished puff pastry 400 g
Rice 50 g
Fish broth cube 0.5 pcs
Dill 100-150 gr
Egg 2 pcs
Salmon / trout, slightly salted 200-300 gr
Spices for fish taste

Cooking method

  • 1. Cook the rice by adding half a fish stock cube to the water. Cook 1 egg.
  • 2. Finely chop the dill, egg and mix it all with rice.
  • 3. Mix fish with spices. I took the fish slightly salted and already cut into small pieces. In Finland we call it "gravisuolattu". Gravisuola is a mixture of salt and spices, I don’t know a Russian analogue, most likely this fish will be called “lightly salted / freshly salted salmon” or something similar.
  • As a spice, I used a mixture of ground peppers (white, allspice and black), salt, sugar, dried basil and citric acid. Here it is called "Kala mauste" - "Fish spices".
  • 4. Lightly roll out the dough (so that it does not rise much during baking) to about the size of the baking sheet.
  • 5. On a baking sheet - two layers of parchment paper, on top - dough.
  • 6. Put the fish in the middle of the dough, and on top of it - a mixture of rice, eggs and dill.
  • 7. We wrap the "envelope".
  • 8. ATTENTION Now the envelope must be turned 180 degrees so that all the seams would be at the bottom. This will put the fish on top of the rice. The moment is key - the fat of the fish during the baking process will soak the rice, which is what we need
  • 9. Use the second egg to cover the top of the cake. With a fork we make holes on top for steam.

  • 10. Preheat the oven to 200 degrees. You can start doing this after point 1, then you don't have to wait.
  • 12. Bake at an average level for 30-40 minutes.

  • 13. Let cool slightly.
  • 14. We eat with appetite, washed down with cold milk (Finns for some reason just like that, I like it too)

  • Anything that is not eaten right away can be stored in the refrigerator. The next day there will be a delicious "cold cake".
  • I want to apologize in advance if I named something of the ingredients in Russian wrong. Sometimes it is difficult to find direct matches to Finnish names in Russian. So ask if something is not very clear.
  • PS: according to the recipe given, the pie will turn out to be small (about 1 kg). So if the family is large and lovers of fish, then the number of ingredients can be safely doubled.
  • Then it is more convenient to use 2 sheets of dough - on one we spread RICE FIRST, and then the fish, and cover with the second sheet, pinching along the edges.
