Ingredients

Apples 250 g
Water 500 ml
Sugar 100-150 gr
Gelatin 15 g
Lemon juice
Vanillin

Cooking method

  • Soak gelatin in half a glass of cold, boiled water. Peel the apples, cut out the core, cut into wedges, add water and cook until soft. When the apples are cooked, drain the broth and dissolve the sugar in it, pour in the soaked gelatin and bring the mixture to a boil (do not boil!), Cool. Rub the apples into a deep bowl through a sieve (colander). Add vanillin to applesauce. If you want sour, add lemon juice or any sour berry juice. Pour the cooled syrup into the applesauce and whisk until a thick, frothy mass is obtained. During whipping, the mass increases by 2 times, or even more, therefore, you need to fill the whipping container by half, or even less. The correct mousse should be whipped on ice, but this is difficult, so I put the whipped mass in the freezer for 5-10 minutes, until a slight gelling effect appears. Then I beat the mousse again. I repeat this manipulation 3 times. As the foam is whipped and cooled, the foam thickens and brightens significantly, becomes airy. When the mass ceases to increase in volume (it takes me 25-30 minutes, I mesh in a food processor), put the mousse on the bowls and put it in the refrigerator for further solidification. Although you can eat right away. I usually do it in the morning so that the children can serve it for dessert in the evening.
  • In the Baltics, such mousse is served with drenched milk, this is really insanely delicious. In the memorable Soviet times, we were fed like this for an afternoon snack in a labor camp in Latvia
  • I also make mousse from applesauce, which I have after cooking juice in a juicer ... I close it while still hot in jars, and when I want mousse, I just wipe the puree and that's it. I use the liquid in the same volume as in the main recipe.
