Tomato Fried Zucchini (Dex-40)

Ingredients

Zucchini or zucchini 2-3 large
Eggs 2-3 pcs.
Flour 0.5-1 tbsp.
Carrot 3-4 large
Bulb onions 3-4 pcs.
Tomato paste or sauce ~ 2 tbsp. l.
Garlic 3-4 large teeth
Salt, pepper (to taste)
Rast. oil for frying

Cooking method

  • 1. Wash zucchini (zucchini), cut into rings 1.5-2 cm thick. Dip them in flour (+ salt), then in an egg and fry for 2-3 minutes on each side. I did it in a multicooker on the Fry, you can do the same in a frying pan.
  • 2. Prepare frying in a pressure cooker at this time. There should be a lot of it, the more, the tastier it will be. On rast. fry chopped onions with grated carrots in oil with the lid open. You can fry it until tender, or you can put it out under pressure for a couple of minutes (+ a couple of tablespoons of water), as I did, and then add tomato paste and fry it, evaporating the excess liquid at the same time. If we fry completely, then half-cooked add tomato paste and fry until tender, stirring occasionally.
  • 3. Finely chop the garlic with a knife (do not press with a press!).
  • 4. We spread the frying from the SV somewhere, leaving literally a little at the bottom. Lay out in layers in this sequence - zucchini - salt and pepper - fry - garlic - zucchini again and then in a circle. I got three layers of zucchini. At the very top should be fried and garlic.
  • 5. Pour 0.5 multi-glasses of water, close the lid, cook on high pressure for 5-7 minutes.
  • If we cook it in a slow cooker, then on Stew for about 25-30 minutes.

In the same way, I cook pollock fish. Everything is the same, only without garlic. Well, I really love this fish, I can grind the whole saucepan myself.
