Ingredients

OPARA for 2 loaves of 800-900 g each
sourdough (I have San Francisco) 178 g
wheat flour 145 g
warm water 47 g
DOUGH
dough 370 g
wheat flour 800 g
salt 14 g
butter 32 g
sugar or honey (I have sugar) 50 g
milk 360 g
water 200 g

Cooking method

  • Sourdough bread without a single gram of yeast!
  • Before kneading the dough, the leaven was refreshed twice to a lifting force of 2 times (in the evening and in the morning, since it was in the refrigerator). Then knead the dough and ferment until doubled. It took me 2 hours. Then bring the milk to a boil and dissolve the butter, salt, sugar in it. In a food processor, mix warm milk mixture with dough and gradually add flour. Knead a homogeneous, soft dough. Leave to wander at temp. 25-30 hail. before an increase of 2-2.5 times. I put it in the oven with the lamp on. The dough has increased 2.5 times in 2 hours. Then knead the dough and put it back in the oven. Within an hour, the dough increased again by 2 - 2.5 times. SUCH fast lifting force without yeast has never been in my practice! Then put the dough on the table, divide into 2 pieces and mold. Since I do not have two identical forms, I decided to use one large 5 liters stainless steel, dividing it with a baking paper divider. I also covered the form with paper, just in case, I'm not sure that the bread won't stick to the stainless steel. She covered the form with the dough with a bag and put it in a warm place. It took about 1.2 hours to increase the dough by 3 times. Before baking, grease the dough with melted butter and bake in a preheated oven at 190 degrees. 45 minutes

Thanks for the quick response! The bread turned out to be wonderful! The first one that I was able to cut thin, thinner than a centimeter. Especially I was looking for one, my daughter asked Santa Claus for a sandwich maker on NG, only very thin pieces are included. I don't want to buy toast, so I try different recipes, so thanks again!

Tata, I have THANKS for the recipe! Wonderful bread turned out! I have whole grain wheat sourdough, overfed from rye. I did half of the norm, instead of butter I put vegetable oil. Nice pieces for the toaster. And at first I wanted to make a hearth, but I was afraid that the dough would blur, it turned out to be very soft.
