Bread with potato flakes

Ingredients

Ripe dough
wheat flour 250gr
water 113gr
fresh yeast 2.5gr

fresh yeast 23gr (I think less can be)
water 390gr
milk 115gr
potato flakes 60gr
salt 20gr

Cooking method

  • Ripe dough
  • Knead all ingredients by hand until a ball forms. The dough is very steep. Let stand at room temperature overnight (12 hours)

  • Dough
  • Mix flour, water and yeast. Knead in a food processor (or by hand) for 7 minutes. Meanwhile, make mashed potatoes from milk and cereals.
  • Add puree after 7 minutes. And when it disperses add salt. Knead for another 10 minutes.
  • Then stretch and fold the dough, tuck it into a ball, put it back in the bowl of the combine and let it rise for 1 hour.
  • Then the same procedure: stretch-fold, tuck and put on a linen cloth in a container (I have a drushlag)))), with the folded edge up, close with a film. Let it rise for 45 minutes (stood for 1 hour, there was a lot)
  • Then gently turn it over on a shovel, make cuts to your liking and plant in an oven preheated to 230C.
  • Bake for the first 15 minutes with steam. Then let off the steam and bake for another 20-30 minutes.
  • Cool the finished bread.

Note

The bread was baked on a stone and on a perforated sheet. The crust on the stone is denser, crisp. And on the sheet the bread came out fluffier with a tender crust.
