Ingredients

Cucumbers (also overgrown) 1.5-2 kg
Carrot 1 piece large (2 medium)
Bulb onions 0.5 -1pc
Green onion (bundle)
Ginger - 1-2 cm
Garlic 4-5 teeth
Salt -2-3 st. l. (maybe more or less)
Fish or oyster sauce (2 tbsp. L.)
Water - 30-50 ml
Sugar 2 tbsp. l.
A mixture of peppers for kimchi (they bring me from Korea), 4-5 full art. l.

Cooking method

  • We cut the cucumbers into four parts without cutting to the end, leave the ass intact (I don't know how to write it correctly)
  • We rub the cucumbers with salt so generously both inside and out, leave them to lie in a bowl, the cucumbers should eventually release liquid.
  • Korean kimchi cucumbers
  • Chop the carrots thinly-thinly into strips or three on a grater, but also into strips.
  • Onions We also chop thinly in half rings.
  • Garlic, ginger either with a blender, or finely chop the same with a knife.
  • Finely chop the green onion.
  • We put everything in a bowl: carrots, onions, green onions, garlic, ginger, add sugar, salt (the amount of salt will depend on how much pickled cucumbers you get after washing), fish sauce, a mixture of peppers for kimchi, water.
  • Mix everything thoroughly, let the sugar and salt dissolve.

  • We wash the cucumbers, try to cut it off a little for salt, it depends on how much salt you need to add to the mixture.
  • We stuff and stuff our cucumbers with the resulting mixture. Thoroughly coating them both inside and out.
  • We put the oiled cucumbers in a jar for storage, let them stand, although they can be eaten even after an hour and a half, but I like them at least after a night, in the evening we eat in the morning. Delicious but spicy.
