Ingredients

wheat flour 100gr.
water 100gr.
fresh yeast 1gr

water 180gr
salt 8gr
fresh yeast 5gr

Cooking method

  • Poolish
  • Dissolve yeast in water. Add flour, stir everything. Leave to ferment at room temperature for 2 hours. When the dough is covered with small bubbles, refrigerate for 24 hours.
  • Dough
  • Combine the rollish with the rest of the ingredients, knead in a food processor (bread maker) for 15 minutes. The dough, after kneading, turns out to be slightly liquid.
  • Then fold into a container and leave alone for 20 minutes. Then stretch - fold three times every 20 minutes. *(I do this without taking it out of the bowl)
  • Then put the dough on a work surface and divide into 6 parts (each about 115 g). Let the dough rest for 20 minutes.
  • Then wrap each piece and roll it in the form of a bun.
  • For proofing, take a cake pan. Grease it and sprinkle with semolina or corn grits.

  • Let the dough stand for 45 minutes.

  • In the meantime, preheat the oven to 230C. Bake for 40 minutes, first 10, with steam. Then release the steam and bake until golden brown.
  • Cool the finished bread.
