Italian wedding almond cookies

Ingredients

almond flour 1.5 stkn
sifted wheat flour 375 g
butter / lard 150 g
powdered sugar 3/4 stkn
fine salt 0.5 tsp
vanilla extract / vanilla sugar 0.5h l. / 8 g
icing sugar for dusting
* glass = 250 ml

Cooking method

  • I had two tasks, make and use almond flour and try lard in baked goods. I chose this cookie. There was no talk of lard, but for myself I decided what would happen.
  • I'll make a reservation right away that the flour needs to be adjusted. This amount of flour is too much, it would be good to remove 50-70 grams, because the dough is practically not formed, although I also added 2 tbsp. l. amaretto.
  • Make almond flour in a blender. My kitchen did an excellent job of this. The almonds are finely ground, the flour is crumbly.

  • The picture does not fully convey the quality of the flour, so I will show the bowl after pouring the almond flour. It can be seen that the bowl is dry, there is not even a hint of oil release. Just in case, it grinded for twenty seconds, the knives remained cold.

  • Beat butter (lard) at room temperature with a mixer until fluffy, adding salt and powdered sugar.

  • Add flour, knead. The dough becomes dry and crumbly, at least for me)))

  • form balls, put on a dry baking sheet and bake for 15-20 minutes at a temperature of 170-180aboutC. When the cookies have cooled slightly, roll them liberally in icing sugar.
  • For good, the almonds had to be peeled, then dried, and then only made flour, but it was lazy for me to do this, and, as Nagira says, with the skin is healthier. In the next picture, the original, as I looked, the original is not much different from my cookie. So why do the extra work?

Make almond flour in a blender.
All in flour or fine crumbs? I can't grind it into flour in a blender, even with sugar or powder.

Manyasha, from this series, in fact, I like more Pistachio cookies
And almonds completely into flour, in my opinion, and do not grind. In any case, I now looked at the pictures on the internet, there and in stores such flour is sold as I have in the photo, only without the peel)))
