Wheat-rye beer accordion with cheese and mustard

Ingredients

Dough:
dry yeast (saf-moment) 1.5 tsp
wheat flour 400 g
peeled rye flour 50 g
dark beer 250 g
sugar 2 tbsp. l
salt 1 tsp
vegetable oil 30 g
butter 20 g
Filling:
butter 40 g
mustard 2 tbsp. l
cheese 150 g
ground paprika 1 tsp

Cooking method

  • Dough:
  • Mix two types of flour, add yeast, salt, sugar, room temperature beer, vegetable oil and softened butter, knead the dough. The dough turns out to be soft, a little sticky at the very beginning, by the end of the kneading it stops sticking to the hands, does not smear on the bottom of the bucket of a bread machine or a bowl of the combine (kneaded in a bread machine, mode "pelmeni", 20 minutes)
  • Fermentation - 120 minutes with two kneading every 45 minutes.
  • Filling:
  • Grind softened butter with ground sweet paprika, add mustard (I had Dijon) and mix.
  • Grate the cheese on a fine grater.
  • Put the finished dough on the table, knead and roll into a layer of 30x50 cm, grease with an oil-mustard mixture and cut across into 5 strips. Sprinkle the first strip with 1/4 of the cheese, cover with the second strip, sprinkle with cheese again and repeat with the remaining dough and cheese (do not sprinkle the last strip with cheese on top). Cut the resulting stack across into 4-5 equal parts and place in a baking paper lined dish.
  • Proofing - 60 minutes under plastic wrap.
  • Bake in an oven preheated to 220C (convection 200C) degrees with steam, after 10 minutes reduce the temperature to 200C (convection 180C) degrees and bake the bread until tender. My total baking time was 40 minutes. If the top of the bread turns brown too quickly, you can cover it with foil.
  • Leave the finished bread in the form for 5 minutes, then transfer to a wire rack or board. Serve warm, tearing the bread into slices with your hands.
